Every day at the corner of Robson and Howe, eager customers line up for the great tasting grilled cheese sandwiches and other comfort foods that Cindy Hamilton and her team are preparing from their food truck.
“I swear if I had a nickel for every time someone said to me, 'I’m so excited!' I would have a lot of nickels,” jokes Cindy, the owner and operator of Mom’s Grilled Cheese Truck. “People say that all the time, and I just love their faces, they are always so happy to be getting a grilled cheese.”
Each day of the week, patrons have an opportunity to feast on something different, with daily grilled cheese specials stuffed with everything from hearty meatloaf to spicy cappicolo to Indian-style chicken and chutney. Traditionalists will, of course, always find a classic grilled cheese on the menu. And those who want to design their own creation can pick their preferred artisanal bread base (sourdough, white, marbled rye or multi-grain) and choose from a range of different cheeses and gourmet toppings.
Gluten-free and vegan options are also available, and all of the nostalgic sandwiches come with homemade potato chips and pickles. “The potatoes are locally grown up in Pemberton and they are the most delicious chips you’ll ever have in your whole life!” exclaims Cindy.
No offence Mom, but your homemade grilled cheese sandwiches ain’t got nothing on this food truck’s oh-so-gooey gourmet creations. The mobile sandwich counter will be vacating its permanent West Georgia parking spot to make an appearance in Yaletown at the first-ever Chef Meets Truck festival. And Yaletown’s own Travis McCord – the culinary mastermind behind the rustic Italian menu at La Pentola – will be slinging the home-style sandwiches. Whether you’re a purist who prefers classic cheddar on white bread or you’re a foodie who fancies adventurous toppings, there’s sure to be a sandwich to suit your taste buds.
This food truck ups the ante on the classic after-school snack. Their menu changes often and their grilled cheeses are customizable, but past offerings have included bacon and caramelized apples with Gouda, and Sriracha-infused mayo with chicken and aged cheddar.
