If you can get it fresh, try some toppings to make grilled corn taste out of this world. Melted butter and salt are sublime when slathered on an ear of corn, but try some different toppings to take this summer staple up a few notches.
For all these recipes, grill the corn in the husk for about 20 minutes and remove from the grill. Pull down the husk, brush on a flavoured topping and put the corn back on the grill for about another 5 minutes until it is nicely browned.
To make the corn topping stir together:
Mix fresh fruit chutney (to taste) into two sticks of melted butter for a surprising sweet topping.
Spread mashed avocado on the corn cob and then sprinkle with lime juice and salt.
Brush the grilled corn with melted butter. Then sprinkle with minced fresh basil and freshly grated Parmesan cheese.
