Handy tip

For all these recipes, grill the corn in the husk for about 20 minutes and remove from the grill. Pull down the husk, brush on a flavoured topping and put the corn back on the grill for about another 5 minutes until it is nicely browned.

Smoky lime grilled corn

To make the corn topping stir together:

  • 2 sticks of softened butter
  • Juice from 2 limes
  • 1 tsp salt
  • 4 tbsp of minced parsley or cilantro
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1 tsp salt.Coat the corn and continue grilling.

Chutney grilled corn

Mix fresh fruit chutney (to taste) into two sticks of melted butter for a surprising sweet topping.

Holy guacamole grilled corn

Spread mashed avocado on the corn cob and then sprinkle with lime juice and salt.

Parmesan and basil grilled corn

Brush the grilled corn with melted butter. Then sprinkle with minced fresh basil and freshly grated Parmesan cheese.

Mexican grilled corn

Mix together:

  • 5 tsp cumin
  • 5 tbsp mayonnaise.Spread the mixture on grilled ears of corn and then roll them in Cojita cheese crumbles. Sprinkle each ear of corn with one tablespoon of chopped fresh cilantro before serving.

Asian grilled corn

Mix together:

  • 1/2 cup honey
  • 1/2 cup hoisin sauce
  • 4 tbsp freshly squeezed lime juice
  • 4 tbsp soy sauce
  • 4 tsp toasted sesame seeds
  • 1 minced Serrano chile
  • 4 sliced green onions.Season the corn with the mix and finish grilling.

Italian grilled corn

Mix together:

  • 1 cup of grated Parmesan cheese
  • 4 minced garlic cloves
  • 1/2 cup chopped parsley.Roll the grilled corn in the mixture and return to the grill for another five minutes.

Sriracha grilled corn

Beat together:

  • 1 cup butter
  • 2 tsp Sriracha hot sauce
  • 6 tbsp India Pale Ale beer
  • 1/2 tsp kosher salt
  • 1 tsp garlic powder
  • 4 tbsp olive oil
  • 1/2 cup chopped cilantro and salt and pepper to taste.
