Who doesn't love a delicious cookie every now and then? Here are two great, simple recipes.

2 healthy chocolate cookie recipes

Chocolate and Almond Biscuits

Almonds pack these biscuits full of vitamin E, and the chocolate gives them antioxidant properties.

Preparation time: 3 hours
Cooking time: 1 hour

Ingredients:

  • 600-625 g (2 1/2 cups) whole wheat pastry flour
  • 175 g (3/4 cup) sugar
  • 10 g (2 tsp. ) baking powder
  • 5 g (1 tsp. ) ground cinnamon
  • 5 g (1 tsp. ) salt
  • 350 g (1 1/2 cup) whole almonds
  • 175 g (3/4 cup) medium dark chocolate, chopped
  • 4 large eggs

Instructions: 

  1. Preheat the oven to 180 °C (350 °F). Line a baking sheet with baking parchment. Whisk together the flour, sugar, baking powder, cinnamon and salt in a large bowl. Stir in the almonds and two thirds of the chocolate.
  2. Beat the eggs and add them to the dough. Knead the dough on a lightly floured surface until smooth.
  3. Cut it in half and roll out to form two cylinders 30 centimetres (12 inches) long and seven and a half centimetres (three inches) thick.
  4. Place the cylinders on the baking sheet and bake for 30 minutes. Leave to cool for two hours.
  5. Cut the cylinder into slices about one centimetre (half an inch) thick.
  6. Place the slices flat on the baking sheet and cook for 30 minutes, turning once, until crisp and lightly browned. Leave to cool on a wire rack for 30 minutes.
  7. Meanwhile, partially melt the rest of the chocolate in a small bowl in the microwave at a low temperature for about a minute. Then stir until completely melted. Pour over the biscuits.

2. Chocolate Chip Biscuits

The darker the chocolate, the healthier it is. These biscuits contain both cocoa powder and chocolate chips. We added nuts and raisins to improve their flavour and nutritional value.

Preparation: 15 minutes
Cooking time: 50 minutes
Ingredients:

  • 350 g (1 1/2 cups) whole wheat pastry flour
  • 200-250 g (1 cup) whole oats, ground
  • 75 g (1/3 cup) cocoa powder
  • 5 g (1 tsp. ) baking soda
  •  2 g (1/2 tsp. ) salt
  • 200-250 g (1 cup) margarine or butter
  • 110-125 g (1/2 cup) granulated sugar
  • 250 g (1 cup) light brown sugar, packed down
  • 2 eggs; 15 ml (1 tbsp. ) vanilla extract
  • 250 g (1 cup) semi-sweet chocolate chips
  • 250 g (1 cup) raisins; 250 g (1 cup) of walnuts, coarsely chopped

Instructions:

  1. Preheat the oven to 180 °C (350 °F). Whisk the flour, oats, cocoa, baking soda and salt in a medium bowl.
  2. Using an electric mixer on medium speed, mix the margarine or butter, granulated sugar and brown sugar in a large bowl for two minutes or until the mixture is fluffy. Add the eggs and vanilla, and mix until the mixture is smooth.
  3. Stir in the flour mixture, then the chocolate chips, raisins and nuts. Spoon the mixture onto a baking sheet in small dollops.
  4. Bake for 10 minutes or until the biscuits are golden brown. Leave to cool for two minutes on the baking sheet, then place them on a rack and leave to cool completely.
