Here's a list of common grains and nuts and the optimal way to store them:

  • White flower has a shelf life of about one year from the time it's milled. Flour can be frozen for long-term storage if it's carefully wrapped in moisture and vapour-proof material.
  • Whole-grain flours spoil within a few weeks because their fats turn rancid. Storing them in a freezer extends their life.
  • Cake mixes last about a year at room temperature. Their quality starts to decline after that time.
  • Bread, cereals and crackers are normally best kept in closed containers at room temperature. Cereals (and other foods made from grains) should be stored in a dark place because they will lose riboflavin if left exposed to light.
  • Yeast breads will keep for a few days if wrapped in plastic or foil and stored in a cool, dark place such as a bread box. In hot weather, refrigeration may be required to prevent mold.
  • Unshelled nuts can be kept at room temperature for three to six months.
  • Shelled nuts may become rancid unless refrigerated or frozen. Discard any that smell musty or are moldy.
  • Baking powder generally lasts 12 to 18 months or as long as the expiration date on the container. To test for freshness, mix one teaspoon of baking powder with 1/3 cup of hot water. If it foams vigorously, it still has rising power. Store tightly covered in a dry place and make sure that measuring utensils are dry before dipping them into the container.
  • Baking soda should be stored tightly covered in a dry place. If using as an odour catcher, change it four times a year.
  • Grains, flours, and other foods packed in materials easily penetrated by insects (like cardboard boxes, paper bags, and cellophane packages) should be transferred to plastic, metal, or glass containers with tight-fitting lids. Even then, insect eggs in the flour or grains may hatch. To kill the eggs before storage, put the product in a microwave oven set on high for two to three minutes.

Use these tips and you'll be able to keep your nuts and grains nice and fresh for as long as possible. Don't hold onto things too long though! If something is looking old, musty, or moldy, it's best to just throw it away rather than risking illness or a poor-tasting meal.
