Simple and tasty camping recipes that'll make them want seconds

Cooking on the grill in the great outdoors is just as easy as cooking at home. And preparing food by campfire when you have everything you need transforms even ordinary snacks into mouth-watering desserts. For every meal of the day (and dessert, too!) here are some inspiring recipe ideas that are easy to make and easier to prepare:

Breakfast

Scramble eggs by mixing them in a dish, and then add veggies and mozzarella or cheddar cheese to make an omelette.

  • Have instant pancake mix on hand, prepared in advance.
  • Cook bacon and save the oil to roast potatoes or sauté vegetables for another meal.
  • Prepare a fruit salad (or canned fruit cocktail) to go with your lunch. You can also fold fruit into your pancakes.

Lunch

Prepare different sandwiches cut into pieces which you can serve with a dip.

  • Main-course salads: greens, pasta, rice, and quinoa.
  • Garnish with fresh herbs (basil, coriander, lemon thyme).
  • Incorporate red beans or chickpeas into a meal with diced ham or chicken.
  • Deluxe: oranges, dried cranberries, raspberries or apples; almonds, pine nuts.
  • Impress your guests with brie baked in aluminum foil ( 10-12 minutes) over the coals. Add to the brie ingredients of your choice and serve with a loaf of French bread.
  • Nuts topped with alcohol (brandy, whiskey, port).
  • Cut a baguette horizontally, top it with pesto, sun-dried tomatoes and shallots; or honey, dried cranberries and caramelized onions.

Dinner

Try canned meat including tuna, salmon and chicken. Easy-to-make recipes suggest adding spices and onions to the mix, and cooking it directly in the can on an open fire.

  • Marinate skewers beforehand for a succulent meal cooked on the grill or in foil.
  • Potatoes cooked at home will reduce on-site cooking time. You can change recipes from day to day by making lunch with leftover bacon, onions, spices and cheese.
  • Vegetables sautéed in foil take about 15-20 minutes to prepare.

Desserts

  • Smores! Basically, it’s a chocolate bar melted with marshmallows sandwiched between two graham cracker cookies; but variations on the original are practically limitless.
  • The banana boat: split a banana in half lengthwise, add chocolate chips and peanut butter then wrap it in aluminum foil and place it on the coals. Let it melt before eating it with a spoon.
  • Muffins in an orange: slice an orange in half and scoop out the pulp leaving the skin intact. Fill one half of the orange shell with instant muffin mix, wrap it with aluminum foil and place it on the fire.
  • Save room for popcorn! You can easily prepare it over an open fire using an aluminum foil dome, seasoned with butter and salt.
