Vincent D’Aoust, once a biologist by trade, has devoted his life and career to the world of roasting. “I’ve always had a very keen interest in coffee,” he says. “There’s no better flavour on earth.”
Fascinated by coffee, the self-taught entrepreneur quickly built up a significant body of knowledge through research and experiments. “Changing careers made it possible for me to bring my passion to life,” he says. “I started buying old Italian commercial coffee machines and putting them in my basement. I was trying to gain a better understanding of their mechanisms.” Vincent quickly mastered the basics of roasting and became both a barista and machine-repairman. Eventually he picked up enough experience and knowledge to contemplate the idea of opening his own coffee shop. And so, in 2011, Le Brûloir was born.
